Ingredients: One 8-ounce package cream cheese, softened
1 egg
1 cup sugar
1 to 1-1/2 loaves bakery white bread
1 stick butter
About 1 Tablespoon sugar
About 1 teaspoon cinnamon
Directions: Beat together cream cheese, egg, and sugar until smooth and creamy. Cut crusts from bread and roll flat with rolling pin. Spread cheese mixture on the bread and roll up. Cut in half.
Melt butter in wide pan (8-inch frying pan) and sprinkle in mixture of sugar and cinnamon. Roll blintzes in butter and place on cookie sheet (at this point, they may be frozen). Bake at 350 degrees for 15 minutes (5 minutes more if they have been frozen). Serve with sour cream.
