Cheese and Egg Salad Pimiento Cheese Spread
Pimiento Cheese Spread
Ingredients: 2 lbs. Velveeta, finely chopped
8 hard-cooked eggs, chopped
2 Tbs. sweet pickle relish
2 small jars pimiento, drained, chopped
Cooked dressing:
2/3 cup cider vinegar
1/2 cup water
Pinch of salt
2 eggs
3/4 cup sugar
2 Tbs., plus 1 tsp. flour
Optional: 1 or 2 cups shredded extra-sharp Cheddar
Directions:
Place small cubes of Velveeta in a large mixing bowl. (Never try to shred Velveeta.) Add finely chopped eggs, pickles and pimiento. For dressing, add vinegar, water and salt to a nonstick medium saucepan. Bring to boiling.
In a bowl, blend both eggs with sugar and flour, then stir into the boiling mixture until thickened. While dressing is very hot, gradually add to the diced Velveeta mixture and stir nearly smooth. Cool slightly and place in a refrigerator container.
For more pronounced taste, add sharp Cheddar to portion desired at serving time.
Yield: About 4 cups spread
