Ingredients: 3 pounds bluefish, split
and boned salt and pepper juice of one lemon
12 anchovy fillets
1 small onion
1 green pepper
1/2 Tbs. chopped
parsley
6 large ripe black olives
2 Tbs. butter
Directions: Put fish in greased baking dish. Sprinkle with salt, pepper and lemon juice. Chop anchovy fillets, onion, green pepper, parsley, and olives separately. Combine and spread on fish. Cover with buttered brown paper and bake in 350 degree oven for 30 minutes. Remove to hot platter and add melted butter and a bit more lemon juice. Serves 6.
