Seafood - Crab & Lobster Lobster Quiche
Lobster Quiche
Ingredients: 1/2 cup milk (fat-free, soy, or rice)
3 eggs or 3/4 cup Egg Beaters egg substitute or egg whites
1/2 cup Bisquick baking mix or or Jiffy muffin mix
1/4 cup to 1/2 cup canola oil
1/4 teaspoon salt (optional)
Dash or two of black pepper
1 teaspoon (or more) basil (optional)
6 to 8 ounces cooked, chopped lobster meat
3/4 to 1 cup grated cheese (blend of 3 or 4 cheeses)
Directions:
Chopped red or white onion or scallions
Blend milk, eggs (or egg substitute/egg whites), baking mix, oil, salt and pepper, and basil together with mixer on medium speed or in blender. Pour into a 9-inch quiche pan that has been rubbed or sprayed with canola or olive oil. Add chopped lobster meat, grated cheese, and onions/scallions.
Press toppings (see below) into wet mixture and store overnight in refrigerator or bake at 350 degrees for 30 minutes until knife comes out clean. Doubles or triples nicely. Enjoy!
