Menestra de verduras
Ingredients: 4 to 5 cloves garlic
1 large red onion
1/3 cup olive oil
1 lb. green beans
1 lb. tomatoes
1/4cup dry sherry
1 large green bell pepper
1 large red bell pepper
1/2 lb. mushrooms
1.1/2cups shelled peas
3/4 cup vegetable broth
3 Tbs. tomato paste
2 tsp. salt
1 tsp. pepper
1/2 cup sliced stuffed Spanish olives
Directions:
Slice the garlic cloves very thinly. Quarter the onion and cut it in thick slices. Simmer the garlic and onions in the olive oil in a large, covered skillet until the onions are wilted.
Trim the green beans and cut them in 1-inch pieces. Cut the tomatoes in thin wedges or large chunks. Add the beans and tomatoes to the onions, along with the sherry, and simmer the vegetables, covered, for 15 to 20 minutes. Cut the bell peppers in quarters or eighths, seed and drab them, and cut the pieces crosswise in 1/4 -inch strips. Wash, destem, and halve the mushrooms. Add the peppers, mushrooms, green peas, vegetable broth, tomato paste, salt, and pepper to the vegetables in the pot. Cover the mixture and cook for about 10 minutes, then uncover and simmer for about another 15 minutes, stirring often, or until the liquid is somewhat reduced and thickened.
Add the sliced olives, stir up once more, and serve hot.
