Pastila

Ingredients:
2 lb. apples, prunes or cherries
1 1/2 Ib. sugar
2 oz. ground almonds
2 eggs
1/2 tablespoon butter
1/4 teaspoon vanilla essence
2 cups water


Directions:
Prepare the fruit chosen, stone if necessary, and stew in water until soft. Strain off the juice and rub the fruit through a fine sieve. Mix the puree with sugar, ground almonds and vanilla essence and cook gently until the mixture thickens. Fold in 2 whipped egg whites and whisk the mixture until stiff. Put into a shallow tin lined with greaseproof paper and leave in a very cool oven to get firm. This will take several hours as it is a matter of drying off the mixture rather than baking it. When set, cut into slices and leave to get cold.
