Fondue Ham and Scrambled Eggs
Ham and Scrambled Eggs
Ingredients: 6 eggs 2 tablespoons water
1.1/2 tablespoons chopped canned
green chiles (or more, to taste),
seeds and pith removed
1.1/2 cups finely diced cooked ham
Dash of pepper
2 tablespoons butter or margarine
1 cup shredded jack cheese
Directions:
Easy to fix in cramped quarters, this substantial dish of scrambled eggs, diced ham, shredded jack cheese, and chopped green chiles works beautifully in a chafing dish.
With a fork, beat together eggs, water, chiles, ham, and pepper.
In a frying pan over direct flame, heat butter; pour eggs into pan and cook over low heat, stirring until eggs are almost set.
Sprinkle cheese over egg mixture, cover, and cook until cheese melts. Serves 3 or 4.
