Follow the recipe for Swiss Cheese Dipping Sauce, substituting 1.1/2 to 1% cups buttermilk for the half-and-half and other liquids. You might also omit mustard and nutmeg; flavor it instead with 1 clove garlic, halved, and heated with the buttermilk, then removed, and 1/8 teaspoon pepper.
This makes an interesting brunch dish when served with asparagus spears that have been cooked just until tender, then chilled; bockwurst sausages (pour boiling water over sausages, cover, and let stand 20 minutes, then drain, cool, and remove casings, and cut into 3/4-inch-thick slices); cherry tomatoes; and rye bread slices. At the table, dip the vegetables and sausages in cheese and use the bread to catch drips en route from pot to plate.
