Flaming fondue

Ingredients:
1 quart and 3 ounces dry
in very thin slices
white wine
3 tablespoons flour
2.1/4 pounds Gruyere cheese,
1/2 cup kirsch



Directions:
This special occasion dish should be made in a copper pan, if possible, but in any case one with a very thick bottom.
Put 1 quart of wine in pan and heat. Stir in cheese slices and cook gently until melted.
With the 3 ounces of wine, blend the flour into a smooth paste. Stir some of the wine-cheese mixture into the paste and transfer all back into pan and keep stirring until mixture thickens.
Pour into a dish; add the kirsch and set liqueur alight just as you bring dish to table. Eaten by dipping in squares of French bread at the end of wooden forks.
