Flaming Dessert Bananas
Ingredients: 2 or 3 medium-ripe bananas
1/2 teaspoon grated orange peel
3 tablespoons butter
2 tablespoons sugar
1/4 cup Cointreau (or other
orange-flavored liqueur)
Sweetened whipped cream
Directions:
An accent of orange makes a pleasant contrast to mild-flavored bananas. A topping of whipped cream gilds the combination.
Peel bananas, cut in half lengthwise and then crosswise; put in a dish and sprinkle with orange peel. Bring to the table with butter, sugar, liqueur in a long-handled pan, whipped cream.
At the table melt butter in a chafing dish over direct flame. Add bananas, cut side up. Cook quickly until lightly browned; turn cut sides down into butter.
Sprinkle with sugar. Simmer until fruit is browned on all sides. Heat the liqueur, ignite, and pour over the bananas and stir until flames die down. Serve fruit in bowls, top with spoonfuls of sweetened whipped cream, and then drizzle with sauce from bananas. Makes about 4 servings.
