Cherries Jubilee

Recipe Cherries Jubilee

Ingredients:
1 can (1 lb.) pitted dark
sweet cherries
1 tablespoon cornstarch
2 tablespoons sugar
Dash each salt and cinnamon
1 tablespoon lemon juice
1/4 cup brandy
Vanilla ice cream


Directions:
This version is designed for two. If you wish, prepare it at the table; if you´re timid, just flame it at the table. Either way, he´ll know you can cook.
Drain cherries, saving 1/2 cup of the syrup. In chafing dish, fondue pot, or saucepan, combine cornstarch, the reserved syrup, sugar, salt, and cinnamon.
In the kitchen, or at the table, bring to a boil over direct heat; stir and cook until liquid is clear and thickened.
Remove from heat and stir in lemon juice and cherries.
If you prepare sauce in the kitchen, reheat at the table.
In a small, long-handled pan, heat the brandy; ignite; pour over fruit, stirring. Spoon flaming fruit and sauce over individual servings of ice cream. Makes 2 generous servings.
