Fondue Bananas in Cardamom Cream
Bananas in Cardamom Cream
Ingredients: 4 tablespoons butter
2 tablespoons sugar
1/8 teaspoon cardamom
4 medium-ripe bananas
Juice of 1/2 lemon
1/4 cup whipping cream
Additional whipping cream,
if desired
Pound cake slices (optional)
Directions:
Bananas are sauteed, then glazed with cream just before serving. The distinctive flavor of cardamom transforms this tropical fruit into an exceptionally fine finale.
Melt butter in a chafing dish or wide frying pan over direct flame; stir in sugar and cardamom.
Peel bananas and cut in slices about 1 inch thick directly into pan. Cook quickly over high heat, shaking (or turning with a spatula) until lightly brown on all sides.
Squeeze lemon juice into pan. (Prevent seeds from falling into dessert by wrapping lemon with cheesecloth.) Add whipping cream. Bring to boiling, stirring carefully so as not to mash bananas, until sauce thickens slightly.
Serve the fruit hot, spooning into individual dessert dishes alone, or over small slices of pound cake. Pour additional whipping cream over each portion if desired. Makes 4 servings.
