Ajoqueso

Ingredients:
1 small can (4 oz.) peeled
green chiles
1 large onion, minced
2 cloves garlic, minced
1/4 cup olive oil
2 tablespoons flour
1 cup half-and-half (light cream)
1/2 pound shredded mild Cheddar or
jack cheese


Directions:
Here is a garlicky version of Mexican chile con queso (chile with cheese). Make it in a fondue pot, chafing dish, or electric frying pan at the table and serve it with corn chips as an appetizer.
Rinse the seeds from chiles and cut into fine dice. Cook onion and garlic in olive oil until wilted. Add flour and stir over direct heat until bubbly, about 2 minutes.
Gradually stir in cream until smooth. Add cheese and the chiles. Heat, stirring, until cheese melts. Transfer, if necessary, to fondue pot or chafing dish, keeping warm over table top burner or water bath. Makes about 8 servings as an appetizer dip (or 4 servings as an entree over toast or tortilla chips).
