Ingredients: salads.
1 cup minced radish
3/4 cup minced or grated cucumber
3/4 cup sour cream
1.2 cup homemade mayonnaise
1/2 tsp. salt, or more to taste
2 Tbs. yogurt
fresh-ground pepper to taste
1/4tsp. hot paprika
1 clove garlic, minced
1 Tbs. lemon juice
Directions: Trim, wash, and mince enough radishes to fill 1 cup. Peel and seed a large cucumber and mince or grate it. You should have about 3/4 CUP of cucumber. Drain the vegetables well in sieves for about 15 to 20 minutes before using.
When the radishes and cucumber are drained, combine all the ingredients in a large bowl and whisk together. Taste, and correct seasoning if necessary. Chill.
Makes about 2.1/2 cups
