Ingredients: slender sourdough or French bread, or pressed
pumpernickel bread butter
small-curd cottage cheese chopped green onions salt and pepper to taste
Directions: Cut thin slices from a sourdough baguette, or cut slices of square, pressed pumpernickel into quarters. Butter the bread, and put a heaping tablespoon of small-curd cottage cheese on each slice. Shape the cottage cheese evenly over the entire slice, then sprinkle about 1 tablespoon of chopped green onions over it and press the onions in very slightly so that they do not fall off quite so easily. Salt the sandwiches lightly and grind a little black pepper on them if you wish.
