Ingredients: Cold water
1 or 2 cardamom seeds, slightly cracked
6 teaspoons powdered sugar
6 teaspoons powdered coffee
2 drops orange flower water
Directions: Into a racquie* pour cold water to within 2 inches of top. Place over chafing-dish flame or electric table stove. Add powdered sugar. Bring to brisk boil. Add coffee and cardamom seeds. Boil to a froth. Remove from heat and tap pot once or twice to settle brew. Return to fire instantly. Bring to a quick boil again and tap again. Repeat procedure twice again. Dip foam from the top into 12 cups. Add orange flower water to pot and about 1 teaspoon of cold water to settle coffee. Pour into cups.
