Italian Deli Meat
Ingredients: 8 oz. frozen potato wedges with skins (about 12 wedges)
2 tbsp. sour cream
2 tbsp. prepared Italian salad dressing
Lettuce leaves
6 ounces thinly sliced roast beef, ham, or turkey
1 tomato, cut into wedges
12 cucumber slices
1/2 sm. red onion, sliced
1 (7 oz.) can artichoke hearts, drained and halved
Directions:
Preheat oven to 450 degrees. Arrange potatoes on baking sheet. Bake until lightly browned and crisp, 20 to 25 minutes. Meanwhile, in small bowl, combine sour cream and salad dressing, mixing well; set aside. Line two plates with lettuce. Arrange equal amount of beef, tomato, cucumber, onion, artichokes and hot potatoes on lettuce. Serve with sour cream-dressing mixture.
