Ingredients: 2 large oranges
1 cup milk
1/2 cup sugar
3 cups sifted all-purpose flour
1/3 cup boiling water
4 teaspoons baking powder
1 egg, well beaten
1/2 teaspoon salt
Directions: Peel oranges. Cut rind in narrow strips. Cover rind with hot water and boil until tender. Drain. Add sugar and 1/3 cup boiling water, and boil orange peel for 20 minutes, stirring constantly. Remove from fire and continue stirring until cool. Add egg and milk. Sift flour. Measure and sift with baking powder and salt. Add to orange mixture. Mix thoroughly. Pour into well-greased loaf pan and let stand 20 minutes. Bake in hot oven (425°F.) about 1 hour. Cool before slicing. Yield: 1 loaf.
