Ingredients: 1 chicken, young fryer Fat for frying
3/4 teaspoon salt
1/4 teaspoon pepper
12 small white onions
12 medium size mushrooms
1 clove garlic
1 small can tomatoes
1 1/2 cups stock
1/2 cup white wine
Directions: Cut chicken into serving pieces. Brown in fat. Add seasonings, onions, mushrooms, garlic, and tomatoes. Cover frying pan. Cook in moderate oven (350°F.) about 1 1/2 hours. While cooking, add 1 cup stock and baste occasionally. When tender, remove to hot platter. Add Vi cup stock and Vi cup white wine to sauce in pan. Cook sauce until thickened. Remove clove of garlic. Pour sauce over chicken. Serves 4.
