Ingredients: 1 young chicken,
2 1/2 to 3 pounds
1/2 cup olive oil, scant
1 finely sliced onion
3 1/2 cups canned tomatoes or
8 medium tomatoes
1 clove garlic
1 teaspoon salt
1/4 teaspoon pepper
1/3 cup white wine, optional
Directions: Disjoint and dry chicken. Cook gently in hot olive oil until delicately browned. Turn occasionally to brown evenly. Add onion and cook until onion is transparent and golden. Add tomatoes, garlic, salt, and pepper. Cover tightly. Simmer until chicken is tender and tomatoes are reduced to thick sauce, about 34 hour. Add wine last 15 minutes of cooking. Remove garlic clove before serving. Serves 4 to 5.
