Ingredients: 10 tablespoons salad oil
1-pound can bamboo shoots, diced
1 5-pound chicken, cut in pieces
7 large green peppers, diced Cornstarch 5 large onions, diced
5 tablespoons soy sauce
2 cups diced canned pineapple
2 teaspoons salt
2 teaspoons brown sugar
Directions: Place 5 tablespoons oil in pan and heat. Dust chicken with cornstarch. Place chicken in pan with oil. Cover and cook until half done. Add soy sauce and salt. Cover and cook until very tender. Remove and set aside. Add 5 remaining tablespoons oil, the bamboo shoots, green pepper, onions, and pineapple to mixture in pan. Simmer 5 minutes. Add brown sugar and chicken. Heat through. Serve immediately with fluffy rice. Serves 8.
