Main Course - Poultry Curried Fowl
Curried Fowl
Ingredients: 1 4-pound fowl
1/2 bay leaf
2 quarts water
2 cups shredded carrots
2 onions, sliced
3 tablespoons flour
3 stalks celery with leaves
1/2 teaspoon curry powder
1 tablespoon salt
1/2 cup shredded coconut (optional)
Pepper to taste
Boiled rice
Directions:
Cut fowl into serving pieces and put into kettle with water, onion, celery, salt, pepper, and bay leaf. Cover and heat to boiling point. Reduce heat and simmer until tender, 2 hours or longer. (If a pressure cooker is used, use only 2 cups water. Cook 20 minutes at 15 pounds pressure.) Remove chicken and strain broth. To 2 1/2 cups broth, add carrots and cook until tender, about 7 minutes. Blend flour and curry powder with a small amount of remaining cool broth and stir into carrots-chicken stock mixture. Boil 1 minute, add chicken and reheat. To serve, sprinkle with coconut and surround with a border of boiled rice. Serves 5.
