Brisket with cabbage Sweet-Potato
Ingredients: 2 pounds beef brisket
1 onion
Water
6 sweet potatoes
Salt and pepper, to taste
1 medium head cabbage
Directions:
Cover meat with water. Add seasoning and onion. Cover and simmer slowly until tender, allowing 1 hour per pound of meat. Add pared sweet potatoes 1/2 hour before meat is done. Add quartered cabbage last 15 minutes. When tender, remove meat and vegetables to platter. Prepare a gravy of 2 cups of the liquid. Thicken with a paste of 2 to 3 tablespoons flour and cold water. Cook until smooth. Serves 6.
