Brisket with Prunes Sweet-Potato
Ingredients: 2 pounds brisket of beef
6 medium sweet potatoes
1 pound prunes, washed
1/2 cup sugar
Boiling water
Sour salt (citric acid)
Directions:
Simmer meat and prunes, just covered with water, about 1 hour. Cut potatoes in eighths. Place in casserole and cover with meat and prunes. Add sugar and a piece of sour salt. Cover and bake in moderate oven (350°F.) until browned. Add boiling water, if necessary. Serves 6.
