Main Course - Meat Sweet and Sour Pot Roast
Sweet and Sour Pot Roast
Ingredients: 4 pounds beef
2 tablespoons vinegar or
2 large onions, sliced
Juice of 1 lemon
1 clove garlic, minced
1 tablespoon brown sugar 1/2 cup stock or water Salt
2 bay leaves
3 tablespoons ketchup 6 potatoes, quartered
1/2 cup raisins
Directions:
Brown meat on all sides in hot fat in heavy kettle. Add and brown onions and garlic. Add vegetable stock or water and bay leaves. Cover and simmer 1 hour. Add more hot stock if necessary to prevent burning. Add potatoes, vinegar, and brown sugar. Cover and simmer another hour. Add salt, ketchup, and raisins. Cover and cook 1/2 hour longer. Serve hot. Serves 8 to 10.
Variation: Omit potatoes and serve roast with noodles or brown rice.
