Main Course - Meat Essic Fleisch
Essic Fleisch
Ingredients: 2 pounds brisket of beef
Boiling water
6 medium-size onions, sliced
1 cup honey
1/8 teaspoon salt
1 slice stale rye bread
Dash each of pepper and thyme
Juice of 1 lemon 1 bay leaf
Directions:
Place meat in a heavy pot and add onions, salt, pepper, thyme, and bay leaf. Add boiling water and simmer until meat is tender, about 2 1/2 hours. Add more boiling water as needed. When meat is almost done add the honey. Stir often while cooking and watch carefully so that it doesn´t burn. Soak the bread in a little water, mash it and when it´s soft add to meat. Stir well. Add 2 additional cups boiling water and the lemon juice. Cook until meat browns well. Add salt and pepper, to taste. Serves 6.
