Main Course - Meat Norwegian beef birds
Norwegian beef birds
Ingredients: 1 1/2 to 2 pounds beef,
cut 1/4 to 1/2 inch thick
1 1/2 teaspoons salt
1/2 teaspoon pepper
1/4 teaspoon ginger
1/4 teaspoon cloves
1/3 pound ground beef
1/4 pound marrow
4 sprigs of parsley, minced
3 cups hot stock or water
Flour
5 tablespoons cooking fat
Directions:
Have meat sliced 1/4 to 1/2 inch thick. Pound until thin and cut into pieces 3x5 inches. Sprinkle each with seasoning. Place 1 tablespoon ground meat, a little marrow, and a little minced parsley on each. Roll up and tie with string dipped in hot water. Roll in flour and brown on all sides in hot fat. Add hot stock or water. Cover and simmer 1/2 hour. Uncover pan and cook 1/2 hour longer. Lift out birds and remove strings. Boil gravy a few minutes longer and serve with meat. Serves 6.
