Main Course - Meat Ragout Of Beef
Ragout Of Beef
Ingredients: 2 pounds lean beef
Salt and pepper, to taste Flour
3 tablespoons fat
1 onion, chopped
1 green pepper, chopped
1 cup chopped celery and leaves
2 tablespoons chopped parsley Paprika
Directions:
Cut beef in 1-inch cubes. Sprinkle with salt and pepper and roll in flour. Brown well in hot fat, and while browning add onion, green pepper, celery, and parsley.
Sprinkle with paprika. Add water to cover. Simmer until meat is tender, 2 1/2 to 3 hours. Thicken with 1 to 2 tablespoons flour blended with same amount of water. Add several spoonfuls of stew and stir mixture into stew. Cook 5 minutes longer. Season to taste with salt and pepper. Ketchup, chili sauce, or grated fresh horseradish may be added, if desired. Serves 6.
