Main Course - Meat Beef Miroton
Beef Miroton
Ingredients: 2 onions, finely chopped
3 tablespoons cooking fat
1 tablespoon flour
1 1/2 to 2 cups stock
1 tablespoon vinegar
Salt and pepper, to taste
Pinch of thyme 1 1/2 cups sliced, cooked potatoes
3/4 pound cooked beef
2 gherkins, sliced
1 teaspoon minced parsley
1/3 cup breadcrumbs
Directions:
Cook onions in hot fat until golden brown. Stir in flour and add liquid slowly. When well combined, add vinegar. Boil 8 to 10 minutes. Pour some of the sauce in bottom of greased casserole. Add slices of beef. Season with salt, pepper, and thyme. Put potatoes in border around the beef. Pour in remaining sauce. Arrange sliced gherkins and minced parsley over top. Sprinkle with crumbs. Dot with fat. Brown in moderate oven (375°F.) 20 to 25 minutes. Serves 6.
