Main Course - Meat Caucasian Dolma
Caucasian Dolma
Ingredients: 4 green peppers
4 large fresh tomatoes
4 medium cucumbers
1 pound ground lamb
2/3 cup rice
1 onion, minced
3 tablespoons parsley, chopped Salt and pepper, to taste
Directions:
Remove seeds from peppers. Scoop out centers of tomatoes and cucumbers to form cups. Mix meat, rice, tomato centers, onion, and parsley. Season to taste with salt and pepper. Stuff vegetable shells with this mixture. Place in a pan with just enough water to barely cover. Cover and bring to boil. Simmer for 1 hour. Serves 6.
