Main Course - Meat Lamb Pilaf
Lamb Pilaf
Ingredients: 3 pounds lamb breast
4 cups hot water
3 large onions, sliced
1/12 cups raw rice
Salt and pepper
Directions:
Brown meat and onions in hot cooking fat or salad oil in heavy pot. Season with salt and pepper. Continue braising until meat is very dark, stir very often, scraping bottom of pan. Add hot water, rice, salt, and pepper. Cover and bake in a slow oven (300°F.) 2 hours. Serves 6 to 8.
Variations: Potatoes (as many as desired), 1 pound kidney beans soaked over night, or whole grain buckwheat may be substituted for the rice.
