Main Course - Meat Shish Kebab
Shish Kebab
Ingredients: 1/4 cup olive oil
1 teaspoon salt
1/4 teaspoon pepper
2 tablespoons wine (optional)
2 pounds lean lamb,
cut in 1 1/4 -inch cubes
2 large firm tomatoes, cut in
thick slices or wedges
2 large onions, cut in thick slices
Small whole mushrooms
1 large green pepper, cut in
1 1/4 -inch squares Cubed eggplant
Directions:
Combine olive oil, salt, pepper, and wine, if desired. Spread over meat and vegetables. Let stand in cool place 2 to 3 hours. Arrange meat and vegetables alternately on skewers. If desired, rub skewers with cut clove of garlic. Broil slowly under moderate heat until tender, turning to evenly brown all sides. Serves 4.
