Ingredients: 3 pounds lean lamb
1 pound fresh mushrooms
Sliced onions
Pared eggplant, cut in1
1/4 -inch cubes
Firm tomatoes, cut in wedges
Salt and pepper Cooked rice
Directions: Trim fat from meat and cut in 1 1/4 -inch cubes. Clean mushrooms. If small, use whole. Remove stems and skin from large mushrooms. Wash and drain well. Alternate meat and vegetables on skewers. Season with salt and pepper. If desired, pour over a little melted fat. Broil under moderate heat, turning skewer to brown all sides. Total time 18 to 20 minutes. Serve at once with cooked rice. Serves 6.
