Turkish Tomato Pilaf

Recipe Turkish Tomato Pilaf

Ingredients:
1 pound mutton or lamb
2 tablespoons cooking fat or salad oil
1 cup rice, washed
2 1/2 cups canned tomatoes
Salt, cayenne, paprika
1 teaspoon sugar Chicken fat Lemon juice


Directions:
Cut meat in 2 pieces. Brown lightly on all sides in hot fat. When meat is half cooked, add rice and cook a few minutes until rice is coated and begins to puff. Add tomatoes (heated to boiling point), salt, and cayenne to taste, and sugar. Cook covered until rice has absorbed all liquid. Dry for a few minutes in moderate oven (350°F.) with door left ajar. Serve with sauce of melted chicken fat to which has been added a little lemon juice and paprika, to taste. Serves 4 to 6.
