Main Course - Meat Caucasian Pilaf
Caucasian Pilaf
Ingredients: 2 pounds fat mutton, sliced
1 cup raw rice
1 onion, minced
2 bay leaves
4 cups stock
6 peppercorns Salt and pepper, to taste
Directions:
Add onion to melted mutton fat in saucepan. When it starts to brown add pieces of meat. Add 1 cup stock, salt and pepper. Cover and simmer 1/2 hour. Scald and rinse rice. Add to meat with remaining ingredients. Cover and simmer 1 1/2 to 2 hours. The rice should be tender but each grain should be separate. Serves 6 to 8.
