Main Course - Meat Lamb Curry
Lamb Curry
Ingredients: 4 1/2 to 5 pounds shoulder
1/2 teaspoon sugar
2 tablespoons cooking fat
2 chopped medium onions
3 teaspoons curry powder
1/2 cup chopped parsley (optional)
1/4 teaspoon dry mustard
1 small chopped clove garlic
2 1/2teaspoons salt
1 #2 can tomatoes
Directions:
Cut lamb into 1-inch cubes. Heat fat. Add all ingredients except meat and tomatoes. Fry gently until onions are soft. Add meat. Fry vigorously 20 minutes, stirring well. Add solid part of canned tomatoes. Cover and cook on low flame 1 hour, stirring occasionally. Add liquid from tomatoes, if necessary. Skim excess fat. Thicken to desired consistency with a little flour and water (or stock). Stir and gently cook for 25 minutes. Serve with boiled rice. Serves 8.
