Irish Stew with Dumplings
Ingredients: 2 pounds lamb or mutton
1 teaspoon salt
2 tablespoons cooking fat
1/4 teaspoon pepper
3 cups boiling water
1 bay leaf
1 cup diced carrots
2 tablespoons minced parsley
1 cup diced turnips
2 tablespoons flour
1 teaspoon Worcestershire sauce
DUMPLINGS FOR STEW
Directions:
Cut lamb into 2-inch squares. Brown in hot fat. Add hot water. Simmer, covered, for 2 hours. Add vegetables and seasonings. Cook 1/2 hour longer. Thicken liquid with flour blended with 2 tablespoons cold water. Drop dumplings on top. Cover and cook 12 to 15 minutes. Serves 8.
