Main Course - Meat Veal Timbales
Veal Timbales
Ingredients: 2 tablespoons cooking fat
Salt and pepper, to taste
2 tablespoons flour
Lemon juice to taste
1 cup meat broth or thin gravy
2 cups ground cooked veal
2 eggs, well beaten
1 tablespoon chopped parsley
Directions:
Make a sauce of fat, flour, and liquid. Add eggs, seasoning, and meat. Mix thoroughly. Pour into greased timbale molds or custard cups. Place cups in pan of water. Bake in moderate oven (350°F.) about 1/2 hour, or until set in center. Turn timbales out and serve hot sprinkled with parsley. Chicken, lamb, or left-over meat may be used instead of veal.
