Meat and potatoes in tomato sauce
Ingredients: 1/2 cup olive oil
1 1/2 teaspoons salt
1/2 clove garlic, chopped
1/4 cup tomato paste
6 to 8 medium potatoes, sliced
1 cup water
1 large onion, minced
1/4 cup red wine
1 pound chopped veal or lamb
Stick cinnamon, 1x2 inches
Black pepper, to taste
3 bay leaves
Directions:
Heat olive oil in frying pan. Add garlic and cook until slightly browned. Remove from pan and reserve for later use. Lightly brown potatoes in the same oil, remove, and reserve. Make mixture of onion, garlic, meat, pepper to taste ana salt. Add to oil and cook 3 minutes. Spread between alternate layers of fried potatoes in a greased baking dish. Mix together tomato paste, water, and wine and pour over top of potato and meat layers. Lay cinnamon and bay leaves on top. Pour the oil left in pan over all. Bake in moderate oven (350°F.) 45 minutes, or until browned. Remove cinnamon and bay leaves. Serve hot. Serves 6.
